One Eyed Jacks


Trying something new here. I had never made these before so if anyone has any tricks or tips, feel free to share how you do it.

Use a glass to cut a hole in the piece of bread. Butter one side of the bread and place on griddle set to medium high heat.

Butter the other side of the bread, then crack an egg into the hole. Salt and pepper as desired, flip when ready.

If you like, butter the circle of bread you cut out and cook it on the griddle too. Use it to dip in the egg yolk. Serve with hashbrowns and orange juice.

We thought these tasted good, but it was more of hassle when cooking for multiple people. Faster to just make fried eggs with toast.

Salad Supreme Potatoes


Poke holes in potatoes with a fork and microwave. (I washed 10 red potatoes and microwaved them, oh I don't remember, between 10 and 20 minutes.)

When the potatoes are cooked all the way through, cube into bit size pieces and transfer to a cookie sheet sprayed with non stick cooking spray.

Brush olive oil onto each potatoes. Or, if you are lazy like me, spray them with Pam. (aka canola oil)

Sprinkle with salt first, then the Salad Supreme Seasoning.

Bake or broil until toasted.

Pita Sandwiches


Mix things up: move your sandwich filling into a pita.

I used some olive oil mayo, ham, lettuce, and cheese. Whatever you like on your sandwiches.

To be honest, my kids didn't eat these very well. I thought they would love them. Pocket sandwiches? How cool is that? I was shocked a few days later when they scarfed a "tuna pizza," aka tuna fish mixed with mayo and spread on the top of a pita. I think it must have been the presentation since they were cut into little pizza shaped wedges. Personally, I thought the pita sandwiches were much better.

Here's to mixing things up and trying something new.

Cowboy Cookies


1 c. shortening
1 c. sugar
1 c. brown sugar
2 eggs
1 tsp. soda
1/2 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla
2 c. flour
2 c. rolled oats
1 package chocolate chips (2 c.)

Drop by teaspoon onto greased cookie sheet.

Bake at 350 for 10-12 minutes.

Fruit Ice Cream Compote


This ice cream is another wowzer from Aunt Kaye. It has a very light flavor and really hits the spot on a hot summer evening.

1 gallon vanilla ice cream, softened
1/2 gallon pineapple ice cream, softened
1 package frozen blueberries
2 packages frozen raspberries
4 sliced bananas

Stir softened ice cream together in a large bowl. Gently fold in berries. Ice cream will turn a light pink color. Fold in bananas. Pour into air tight container and return to freezer to firm the ice cream a little.

Serves 16-18 good size portions.

Cheeseburger Pie

1 lb. ground turkey or ground beef
1 onion, diced
1/2 tsp. salt
1/4 tsp. pepper
1 c. shredded cheese

Brown ground beef with onion and drain. Spread in a pie plate sprayed with Pam and sprinkle with salt and pepper and cheese.

1 1/2 c. milk
3 eggs
3/4 c. Bisquick

In a blender beat milk, eggs, and Bisquick on high speed for 15 seconds. Pour into pie plate.

Bake at 400 until golden brown and knife inserted in center comes out clean - about 30 minutes. Let stand 5 minutes before cutting.

You can double this recipe and bake in a 9 x 13 pan.

High altitude: Bake 10 inch pie about 35 minutes. Bake 9 inch pie 30-35 minutes.

My five-year-old gave this dinner "thousands of thumbs up."

My husband calls this "the brother of Breakfast Pizza." If you like breakfast pizza, it's a pretty sure bet you'll like this too. It doesn't have as much egg and the flavor is a little different so it's a little more dinner-ish than breakfast. As if we wouldn't eat breakfast pizza for dinner anyway....

It's also fun to eat when you make it in a glass pie dish and your slices are wedges of a pie.

Serve with ketchup if desired.

Minestrone Soup

A new recipe from my Mom.

4 c. canned tomatoes
4 c. water
1 can beef consommé (Campbells Soup)
1 8 oz. can tomato sauce
4 stalks diced celery
3 large diced carrots
1 tsp. basil
1 Tbl dried parsley
1 Tbl Sugar
½ tsp oregano
2 cloves garlic, crushed

Put all these ingredients in a large pot and simmer until vegetables are soft, about 45 min to 1 hour.

1 lb sweet Italian sausage
2 large onions, chopped

Brown sausage and onion together and add to pot.

1 can cut green beans
1 can red kidney beans
1 c. elbow macaroni (uncooked)
2 small zuchinni cut in half the long way and then sliced

Continue to simmer until macaroni is tender, about 15 to 20 min. Salt and pepper to taste.

I like to double the liquid because there doesn’t seem to be enough.

This soup is very low in points (1 or 2 points per cup if I remember right?).

Cottage Cheese Lasagna

1 lb. hamburger
3/4 c. chopped onion
1 can tomato paste (6 oz.)
1 tsp. salt
1/4 tsp. pepper
1 Tbl. sugar
2 tsp. oregano
1/4 tsp. garlic salt
2 cans diced tomatoes
1/2 c. water
12 oz. lasagna noodles (9 noodles for a 9 x 13 pan)
1 raw egg mixed into 2 c. cottage cheese
2 c. grated cheddar cheese
2 c. grated mozzarella cheese

Brown hamburger and onion. Drain. Add diced tomatoes, tomato paste, water, garlic salt, salt, pepper, sugar, and oregano. Simmer until meat sauce is thick. Cook lasagna noodles until tender in salted water (10 min). Rinse in cold water. Grease 9 x 13 pan. Put a layer of noodles in bottom, a layer of meat, cottage cheese, mozzarella cheese, and cheddar cheese. Repeat 2 more time (3 layers) ending with cheese on op. Bake at 375 for 30 min. and let sit for 30 min.

Serving suggestions: Olive Garden Salad and Easy Garlic Bread.

Note: When I have my own bottled tomatoes, I use 1 jar of tomatoes and delete the water.

Here's the consistency of the sauce before you assemble the lasagna.

Olive Garden Salad

2 lb. bag of lettuce
1 can olives - whole
purple onion slices - thin
tomatoes
1 Box croutons - use big croutons; small ones go soggy

Dressing:

Wishbone Italian Dressing (small bottle)
1/2 whipped egg
1/4 c. Parmesan cheese
1/2 Tbl. basil
1/2 Tbl. oregano

Strawberry Belgian Waffles


Believe it or not I had never had anything but syrup on waffles until a few months ago. So if for some reason you are strange like me and have never tasted these before, please go put strawberries and cream on top of some waffles right now. You will feel like you are eating strawberry shortcake for breakfast.

How does your family do waffles or pancakes? I love this waffle recipe, and I also love the Krusteaz pancake mix (with more water added than what the recipe calls for). What brands do you like and/or which recipes does your family like? I know about Amy's whole wheat pancakes, and I think my inlaws have a whole wheat pancake recipe that I need to track down. It will take some time, but I think I'll give some different recipes a try. Sounds like an easy way to get more whole wheat into my family.
